BIA Finalists are announced!

The finalists in the Bakery Industry Awards, the must-attend awards event for the bakery industry, being held at the Hilton Park Lane on 9 September have been announced. The three finalists in the Craft Bakery category, sponsored by Dawn Foods, are:

DAWN FOODS BRINGS A TASTE OF THE USA TO THE UK

Dawn Foods’ National American Sweet Bakery Week returned for the second year running and saw more bakers than ever getting involved to bring a scrumptious slice of the USA to the UK!

From 1 – 7 July, the week, which was organised in association with California Raisins, saw bakers up and down the country embracing recipes from the other side of the pond to maximise on the popularity of the American-inspired products they have to offer and provide consumers with the all-American sweet treats they love.

“We’ve worked with Dawn for several years and we recognised, through our participation in the initiative last year, that National American Sweet Bakery Week offered us a different and exciting way to attract customers. We styled the bakery with red white and blue decorations and opted for a Vegas theme, producing cupcakes topped with chocolate dice, playing cards and even roulette chips – they were a big hit with our customers!”

Dawn’s Desserts for a Long Hot Summer

Nothing beats a long summer lunch in the garden – delicious salads and meats, chilled white wine and of course a centre piece dessert such as a tart filled with fresh fruit. NEW and Improved Range of Cream Stabilising Fonds


Dawn Foods has reformulated and improved its range of cream stabilising Fonds – ideal for use in continental style patisserie and desserts – so that they are now even more stable and have a harmonised yield as well as all natural flavours, in line with increasing consumer demand for more natural products.

Dawn’s Fond powders not only stabilise, but they colour and flavour lightly whipped dairy or non-dairy cream to create a set mousse in minutes. Now quicker to dissolve, they help to reduce the time required to create complex patisserie and gourmet desserts. The finished mousse can be used to layer, mould and pour into serving dishes for striking sweet creations suitable for the most elaborate of patisserie displays.

Available in 18 different authentic flavours, from lemon and strawberry to peach & passionfruit, white chocolate and today’s on-trend flavour, ruby orange, the Fonds provide a reliable set every time, so ensuring consistent results in all finished products. The fruit Fond varieties also contain fruit pieces to give added natural flavour and colour.

To stablise, thicken and sweeten cream, bakers simply need to mix 200g fond with 200g water and gradually fold in 1000g lightly whipped cream*. The product can then be set in the fridge for 20 minutes before being frozen.

Get that Tropical Feeling with NEW Dawn Foods’ Frostings

Dawn Foods has launched two new limited edition, Ready to Use frostings with all natural tropical flavours and inclusions – a Lemon and Lime Frosting with a refreshing citrus zing, and an exotic Coconut Frosting. Both are ideal for creating indulgent summer time sweet treats with a tropical twist.

Made using lemon oil, the new Lemon and Lime frosting gives a citrus flavour burst in every mouthful. Dawn has included real lime pieces – used for the first time in a frosting – to give added flavour and natural texture as well as visual appeal. With all natural flavours, the new Lemon and Lime Frosting also has no artificial trans or hydrogenated fats and are made in a vegetarian and nut-free factory.

Creamy and smooth, with a natural, subtle coconut flavour as well as real coconut pieces for added texture, Dawn’s Coconut Frosting also has no artificial fats, giving bakers reassurance that their finished products will be of the highest quality.

With both lemon and lime and coconut bang on trend flavour favourites with consumers, the new Frostings are ideal for creating seasonal summer sweet treats –swirling on cupcakes, filling donuts, injecting into muffins and sandwiching between cakes for example.

NEW Natural Flavour Blueberry Compound

Dawn Foods has launched Blueberry Compound, a new concentrated all natural fruit flavour paste that can be used to add the subtle taste of blueberry and an attractive hue to frostings and filling creams in cakes and desserts, as well as ice creams, mousses and even milk shakes!

The new Blueberry Compound joins the existing range of 19 compounds with flavours such as lemon, caramel, pistachio, mango and cocoa, many of which have also been improved to now offer a range of completely natural flavour pastes to the bakery and food production sectors.

Made with real fruit juices Dawn’s Blueberry Compound – like the other fruit based compounds in the range – uses natural pectin as its binding system too.

The majority of Dawn Compounds now also have a harmonised dosage of 40-60g per 1000g of cream or batter making it easier for bakers to calculate recipe quantities. All of the compounds also have standardised viscosity to make application much easier too.

Dawn has identified a gap in the market for all natural flavours which can be added to a variety of sweet bakery items.  We have reworked our extensive range of compounds so that bakers can be assured of consistency in every application as well as the natural flavour that their customers demand. And, as a known ‘superfruit’, blueberries have a perceived health benefit. NATIONAL AMERICAN SWEET BAKERY WEEK RETURNS FOR 2015!

This year, Dawn Foods’ National American Sweet Bakery Week will return 1- 7 July 2015, bringing an even bigger scrumptious slice of the USA to the UK! Dawn Foods knows that UK folk love American sweet treats just as much as our friends across the Atlantic. So, as part of its Authentic American Bakery Campaign, Dawn is encouraging bakers to once again get involved with National American Sweet Bakery Week, bake American-style goodies inspired by recipes from the other side of the pond and share their bakery pictures for the chance to win some great prizes too! National American Sweet Bakery Week forms part of Dawn’s Authentic American Bakery Campaign, an initiative especially for high street bakers. REBRAND MARKS A NEW SUNRISE AT DAWN

Dawn Foods will be re-branding its complete product range across Europe from January 2015 onwards with a striking, cohesive Dawn ‘family’ brand identity.

The extensive re-branding programme will mean that all product variants including the Sucrea®, Fruibel® and Caullet brands will now come under the Dawn Foods ‘Creating Happiness’ identity. This re-branding and packaging initiative will also be a platform for new products to be launched into the market later in 2015.

Packaging across all products will feature a quality new look with bold photography and clear graphics against a warm orange colour scheme representing early morning sunrise – start of the day for bakers – and synonymous with Dawn Foods.

The new packaging design will also enable Dawn Foods to make clearer declarations on pack such as all natural ingredients, or fruit content for example in its products.

A major player in the sweet bakery sector, this year will see Dawn expanding further in all channels: craft bakery, foodservice and industrial (plant) bakery.
